1/3CupGrated Apple(or puree mix leftover from juicing)
1/2CupLight Brown Sugardo not pack the Light Brown Sugar
2Eggsroom temperature
1/3CupLight Olive Oilextra virgin
1/4tspSalt
1tspBaking soda
1tspCream of tartar
1tspVanilla extract
3tbspSemi-sweet mini chocolate morsels(I use Enjoy Life Semi-Sweet Mini Chocolate Chips)
Instructions
Preheat oven 350 degrees F
Set aside chocolate morsels. Will be adding later.
Mix dry ingredients well. Do not add chocolate morsels just yet.
Mix wet ingredients in separate bowl (whip for at least 2 minutes).
Add dry ingredients to the wet ingredients and mix until well combined.
Pour mixture into a greased loaf bread glass dish.
Sprinkle mini chocolate morsels over top.
Bake 35 minutes, check for doneness with toothpick, if need bake for 3 to 5 minute increments.
Be cautious to not over bake, it will have carry-over cooking as it cools. Cool 10 minutes before turning out on cooling rack.
Notes
**Note: You can easily convert this apple bread into cupcakes if desired. Evenly split mixture into cupcake liners. Check cupcakes at 15 minutes, and every 3 minutes after until toothpick comes out clean.
