Homemade Gluten Free Apple Bread

Today we are sharing Mamma D’s original recipe for HOMEMADE APPLE BREAD! This tasty treat is a great breakfast option and can easily satisfy that sweet craving too. Freezes great!

This recipe is Gluten Free, Soy Free, Corn Free, Nut Free, Dairy Free. *The oats I am using are gluten free since I have celiac disease but can be easily substituted with regular oats.

INGREDIENTS:

  • 1 3/4 Cup GF Oat Flour
  • 1/3 Cup Grated Apple (or puree mix leftover from juicing)
  • 1/2 Cup Light Brown Sugar
  • 2 eggs room temperature
  • 1/3 Cup Light Olive Oil
  • 1/4 tsp Salt
  • 1 tsp baking soda
  • 1 tsp cream of tartar
  • 1 tsp vanilla extract
  • 3 tbsp Semi-sweet mini chocolate morsels (I use Enjoy Life Semi-Sweet Mini Chocolate Chips)

INSTRUCTIONS:

Preheat oven 350* Set aside chocolate morsels.  Mix dry ingredients well. Mix wet ingredients in separate bowl (whip for at least 2 minutes) then add dry and mix until well combined. 

 Pour into a greased loaf bread glass dish.  Sprinkle mini chocolate morsels over top.  Bake 35 minutes, check for doneness with toothpick, if need bake for 3 to 5 minute increments. Be cautious to not over bake, it will have carry-over cooking as it cools.  Cool 10 minutes before turning out on cooling rack.  

**Note: You can easily convert this apple bread into cupcakes if desired. Evenly split mixture into cupcake liners. Check cupcakes at 15 minutes, and every 3 minutes after until toothpick comes out clean.

Serving suggestions:  

Serve warm w/favorite ice cream .

Breakfast suggestion:

Toast slices w/butter in skillet for Apple French Toast w/maple syrup and fresh berries

  • Oven
  • Loaf Pans If you do not use cupcake tins.
  • Cupcake Tins If you do not use loaf pans.
  • Toothpick

Ingredients
  

  • 1 3/4 Cup Gluten Free Flour we grind our own certified gluten free oats to make oat flour
  • 1/3 Cup Grated Apple (or puree mix leftover from juicing)
  • 1/2 Cup Light Brown Sugar do not pack the Light Brown Sugar
  • 2 Eggs room temperature
  • 1/3 Cup Light Olive Oil extra virgin
  • 1/4 tsp Salt
  • 1 tsp Baking soda
  • 1 tsp Cream of tartar
  • 1 tsp Vanilla extract
  • 3 tbsp Semi-sweet mini chocolate morsels (I use Enjoy Life Semi-Sweet Mini Chocolate Chips)

Instructions

  • Mix dry ingredients well. Do not add chocolate morsels just yet.
  •  Mix wet ingredients in separate bowl (whip for at least 2 minutes).
  • Add dry ingredients to the wet ingredients and mix until well combined. 
  • Pour mixture into a greased loaf bread glass dish.
  • Sprinkle mini chocolate morsels over top.
  • Bake 35 minutes, check for doneness with toothpick, if need bake for 3 to 5 minute increments.
