
Who doesn’t love a quick and easy breakfast or snack that takes 30 minutes or less? The oats I am using are gluten free since I have celiac disease but these oatmeal bars can be easily substituted with regular oats.
This recipe is gluten free *using certified gluten free oats*, nut free, and a dairy free option!
Ingredients:
- 2 Cups Org. GF Oatmeal
- 1/2 Cup Org. GF Ground Oatmeal Flour
- 1/4 Cup Light Brown Sugar
- 1/3 Cup of Melted Butter OR Olive Oil* for dairy free
- 1/4 tsp. Salt
- 1/4 tsp. Cinnamon
- Your Choice-Jar of Preserves(We use Strawberry, Apricots)
- 8×8 Glass Dish

Instructions:
Preheat oven to 350*. Combine all ingredients (except the preserves) together until crumbly and well mixed(if it is too dry, add an additional tsp of olive oil). Press half of the mixture into a greased 8×8 glass baking dish. Spoon teaspoon dollops of your favorite preserves over the top. (I stagger as it will slightly spread out when cooking) Remember preserves are generally pretty sweet, so you may want to err on the sparring side.

Take the remainder of the oat mixture and sprinkle over the top covering all areas like a crumble. Lightly press down, then bake for 20-25 minutes until you see the preserves bubbling and the oat mixture lightly brown.

Take out of oven and allow to cool/slice (for me usually about 20 minutes) Store tightly covered. These also store great in the freezer. Enjoy!
